The chef knife is the central piece of any kitchen knife set. When you think of a kitchen knife, the first one that comes to mind is a chef knife. My chef knives are inspired by both Western and Japanese styles, in an effort to get the best of both worlds. They are forged and ground to be thin and lightweight, but not overly delicate, as some Japanese gyutos can be. The tip is low enough to comfortably reach the board without having to crane your wrist, but with enough clearance to rock chop. As with all of my knives, but most importantly the chefs, the choil and spine are rounded, and the end of the handle is chamfered for increased comfort of the user.
