The petty (derived from “petit”) is a utility knife, between a paring and a chef knife. Professional chefs keep these on the line during service because they are smaller in size and can perform any task. They’re great for when you are traveling, or just cooking for a few people, and don’t need to bring out the big chef knife. This knife has an asymmetrical (70/30) left hand grind.
