130mm(5") Petty with Maryland Oak Western handle. This wood is reclaimed firewood, and it has a small amount of resin filling a void that was in the center of the block.
The word petty is derived from the French word, "petit". They are essentially the middle ground between a paring and a chef knife. There is no defined size or shape to a petty, they are designed to handle all kinds of tasks. In my view, they are the ultimate utility kitchen knife. From small delicate work, to breaking down chickens and everything in between, the petty is my go to knife for every day cooking.
