The paring knife is the real workhorse of the kitchen, handling all the small tasks that the chef is too cumbersome for. Paring knives are underappreciated, but they are capable of so much more. Whenever I'm cooking for just myself, 9 times out of 10, I'll reach for my paring knife. If I'm just making a couple cuts, why reach for the big chef when the paring will do the job and not take as much time to clean? That is why you need a good paring knife, because most of the time, it's the only knife you really use.
