170mm Chinese Chef

170 x 83mm Chinese Chef in 1084 high carbon steel. 

These are waterjet cut from 1/16" thick stock, so these blades are thin! 

Chinese chef knives are some of my favorites in the kitchen. Designed to be the perfect knife to let gravity do most of the work for you. They're thinly ground to sail through your food, but have enough height to give the knife enough weight where it can fall through your ingredients. All you need to do is pick it back up off the cutting board. Great for everything from mincing garlic to slicing meats, this is truly an all around kitchen knife. 

This is my small size. Basically a tall nakiri, tiny (in comparison to the others) but useful!
