180mm Western Veg/Prep

180 x 79mm knife with charred ash endgrain handle. The wood is from Camp Small in Baltimore. 

1084 carbon steel blade. 

This thing is wildly thin. Don't let the bolster fool you, this thing feels like it isn't even there when you hold it. This thing is made for gliding through produce like onions and potatoes. 

I would avoid cutting hard produce, as this knife is thin for a long ways, any torsion to the blade while cutting something hard will likely damage it. There's almost nothing behind the edge. Just look at the choil shot picture.
